How to pretranscode for use for multiple devices?

I'm a new user and I was wondering if someone can help me with the following questions.
I want to use WMS with PS3 and ipad simultaneously and wants to pre-transcode my entire collection (have plenty of storage) for both these devices in the highest possible quality and save them in a folder so that I can completely avoid real-time transcoding. My questions are:
1. How can I pre-transcode my files to both these devices and keep them in a folder so that they are ready for use.
When I run pre-transcode by running files/directories processes, it is transcoding to the device that was chosen
as a default device under Settings->device drop-down. If I keep fliping this setting between these devices, the
transcoded file for previous device is getting overwritten.
2. When I try to play a pre-transcoded file, WMS re-transcodes that file again (only for some of my files) while playing.
How can I avoid this behavior?
3. How do I choose the profile that offers the best quality for my two devices (TV is 1080p 1920x1080)?
Do I've to tweak the settings of a profile to get the best possible quality or profiles that offer best quality are available?
